Et voilà—Fig Maple Pecan Pie with Lemon Elderberry Coconut Ice Cream! Made for Jacob’s birthday…and I’ll just say we both had difficulty moving after this. SO. SCRUMPTIOUS. To all those who warn against using coconut milk in #vegan ice cream: Balogna! This batch made some of the creamiest ice cream I have *ever* consumed—seriously—and the flavors cleansed the palate perfectly (sorbet wannabe). Made with a spelt shortcrust, and garnished with lime zest and holy #basil straight from my garden. Bon appetit ! 😋

Shiitake Báhn Mì with quick-pickled daikon, carrots, and cucumbers, a creamy sriracha almond butter dressing, and a bed of fresh cilantro. Adapted from @isachandra with love! All of these flavors meld together so perfectly—sweet, sour, spicy, salty—I believe #umami has been achieved. Shiitake caps provide a hearty, gratifying texture and taste here; no need for tofu (girl, bye). Fear not, #glutenfree friends—I wouldn’t mind at all reconstructing this into a crispy soba noodle salad. Otherwise, this is my new favorite handheld. Quick snapshot before going out, served with a Kir Détroit (more on this later).

Sesame Avocado Quinoa Pilaf with Japanese Sweet Potato Tostones and Caramelized Ramps—a new favorite dish added to the repertoire! Ramps, also known as wild scallions or leeks, are only available for eight weeks during springtime. While they can be eaten raw, their garlicky-onion flavor palate shines when grilled or roasted. Here, I’ve added the raw green tops of the ramps into the pilaf—which is also dressed with a zesty coconut sour cream. This tostone experiment turned out to be irresistible! And the scattered drop plate garnish is a cashew-based tzadziki sauce. Special thanks to and adapted once again from the luminous @meridavss . Bon appétit 🌞.

Unyieldingly scrumptious, with black beans, sautéed veggies simmered in a smoked porter (“Fire & Ice” single batch, Brooklyn Brewery), tomatoes, tons of fresh oregano, and #soyfree (meltable!) cheddar cheese. I’ll admit—I ate this for breakfast and lunch, and already want to make thirds.

Millet and Japanese Sweet Potato Porridge—loaded with dietary fiber and phytonutrients! Adapted from Afro-Vegan by the luminous @bryantterry . This type of sweet potato (“satsuma-imo”), which has a purple skin and a subtler, drier taste than it’s counterparts, has unmistakable hints of chestnut that come to life when roasted. Sweetened with dashes of blackstrap molasses and real maple syrup, and topped off with dried Michigan cherries and a dollop of almond butter. This makes me want to frolic outside under the Spring sun.
